Veg Noodles

Recipe inspired by my college-time best snack from my friends tiffin box.

Made it for my husband who likes to eat this outside often. As all other recipes, this is also simple easy to make and tasty

Ingredients :
Noodles - enough for 2 ppl
Veggies..carrot, capsicum, onions, cabbage - Hand full
Spring onions (I didnt add this, just used wht I have at home)
Soya sauce - 1 tbsp
Green Chillies - 2/3 (if you like it hot!)
Pepper - 1 tsp
Salt (can add ajinomoto, I skip this as it might not be a healthy choice)
oil - 1 tbsp

  • Cook noodles in boiling water with a little salt and 1 tsp oil
  • Strain the noodles and run cold water over the cooked noodles and keep it aside
  • Heat oil and fry green chillies & onions in a tawa
  • Add all veggies and fry for few minutes till they are tender (dont over cook)
  • Add pepper, soya sauce and salt and fry for few seconds
  • Add noodles to it and cook for 5-8 mins more

Serve it with tomato sauce, I like to eat it plain..

    Suggesstion : If the noodles are cooked with 1 tsp of soya sauce ,little sugar and Ajinomotto (optional) like it is done for the fried rice in the blog, it would taste good.

    For Noodles to get separated as single strands: after the noodles are cooked it needs to be washed with cold water and water should be strained and the noodles need to be dried.
